Magnan's Roast Beef Recipe
1. Unwrap the roast — do not be surprised by the odor. It is due to the vaccum-pack
process and the creation of anaerobic gases. The product is always of top quality.
2. Let it rest at room temperature for 30 to 60 minutes.
3. Preheat oven to 500o F.
4.Thinly coat the roast with strong mustard
5. Verify the inside temperture using a meat thermometer
(see chart below for cooking times).
(a) Blue - 110o F - (43o C)
(b) Rare - 120o F - (49o C) — remove roast from oven – cover with aluminium
paper – let it rest for 20 to 30 minutes on top of the oven.
(c) Medium - 130o F - (54o C)— remove roast from oven – cover with aluminium
paper – let it rest for 20 to 30 minutes inside the oven (make sure oven is off)
(d) Bien cuit - 140o F - (60o C)
6. Serve slices of roast on warm plates
7.Reheat the slices with the delicious Magnan roast beef juice.
